Italian Vegetable Soup - cooking recipe
Ingredients

1 lb. sausage (turkey, smoked sausage), cut in chunks
1 medium onion, sliced
1 (16 oz.) can whole tomatoes with liquid, chopped
1 (15 oz.) can garbanzo beans, drained
1 (10 1/2 oz.) can beef broth
1 1/2 c. water
2 medium zucchini, cut into pieces
1/2 tsp. dried basil
grated Parmesan cheese
Preparation

In a 3-quart saucepan, cook sausage and onion.
Drain fat. Stir in tomatoes, beans and broth.
Reduce heat and simmer 5 minutes or until the zucchini is tender.
Sprinkle each serving with cheese.
Yields 6 to 8 servings (2 quarts).
