"Bethunes" Sweet Potato Pie - cooking recipe

Ingredients
    1 c. margarine or butter
    1/2 c. sugar
    1/2 c. brown sugar, packed
    1/2 tsp. salt
    1/4 tsp. ground nutmeg
    9 medium sweet potatoes or yams (4 lb.), cooked, peeled and mashed
    3 eggs, beaten
    2 c. milk
    1 Tbsp. vanilla
    3 unbaked pastry shells (9-inch)
Preparation
    Heat oven to 350\u00b0.
    Beat margarine, sugars, salt and nutmeg in large bowl with electric mixer on medium speed until creamy.
    Add sweet potatoes; beat until well blended.
    Beat in milk and vanilla.
    Pour filling into pastry shells, using about 4 cups in each shell.
    Bake 50 to 60 minutes or until set.
    Cool completely on wire racks.
    Refrigerate until ready to serve.
    Store leftover pie in refrigerator.
