Ingredients

1/2 c. raisins
2 c. milk
2 c. cooked rice
2 egg yolks, reserve whites
1/2 c. brown sugar
1/4 tsp. salt
2 egg whites, beaten stiff
1/2 tsp. vanilla or lemon juice
Preparation

Soak raisins in hot water to cover until raisins are soft. In a double boiler, heat milk and rice.
Beat egg yolks until smooth and add brown sugar and salt.
Add milk and rice mixture very slowly, then pour back into double boiler and cook over boiling water until very thick.
Fold in egg whites.
Add vanilla or lemon juice.
Fold in drained raisins.
Serve warm or cold or with fruit (blueberries and a sprinkle of cinnamon).
