Colcannon(Irish Potatoes) - cooking recipe
Ingredients

1 can cooked, mashed potatoes
1 1/2 c. cooked cabbage, finely chopped
1/4 c. butter
1/4 c. milk
1/2 c. finely chopped onion or scallions
Preparation

Gently fry onion and cabbage in butter until soft.
Add milk to well mashed (no milk was added at the point of the mashing) potatoes.
Heat and beat until mixture is fluffy.
Can also be baked in a shallow pan to crisp top of potatoes.
