Carrot And Zucchini Bars - cooking recipe
Ingredients

1 1/2 c. all-purpose flour
3/4 c. packed brown sugar
1 tsp. baking powder
1/2 tsp. ginger
1/4 tsp. baking soda
2 slightly beaten eggs
1 1/2 c. shredded carrots
1 medium shredded zucchini (1 c.)
1/2 c. raisins
1/2 c. chopped walnuts
1/2 c. cooking oil
1/4 c. honey
1 tsp. vanilla
Preparation

In large bowl, mix together first 5 ingredients.
In another bowl, mix rest of ingredients, except carrots.
When well blended, add carrots, then combine to flour mixture.
Stir just until blended.
Spread in ungreased 13 x 9-inch pan.
Bake at 350\u00b0 for 25 minutes or until toothpick comes out clean.
Cool on rack. Frost with Citrus Cream Cheese Frosting.
Cut into bars.
