Potato And Cheese Soup - cooking recipe

Ingredients
    3 c. peeled and diced potatoes
    1/2 c. celery, diced
    1/2 c. carrots, diced
    1/4 c. chopped onion
    1 Tbsp. fresh parsley (can use dried)
    1 1/4 c. chicken stock
    dash of pepper
    1 1/2 c. low-fat milk
    2 Tbsp. flour
    6 oz. Velveeta cheese, grated
Preparation
    In large saucepan, combine potatoes, celery, carrots, onion, parsley, chicken stock and pepper.
    Cover and simmer 15 to 20 minutes, or until tender.
    Gradually add milk and flour together until blended well.
    Pour milk mixture into vegetables and cook, stirring constantly, until thickened.
    Add cheese and stir until melted.
    Makes 5 cups.
