Fried Drop Cakes - cooking recipe

Ingredients
    1 1/3 c. flour
    2 1/2 tsp. baking powder
    1/4 tsp. salt
    1/3 c. sugar
    1/2 c. milk
    1 egg, well beaten
    1 tsp. melted butter
Preparation
    Beat egg until light; add milk, dry ingredients (mixed and sifted) and melted butter.
    Drop by spoonfuls in hot deep fat (370\u00b0); fry until light brown and cooked through, which must at first be determined with a skewer or by breaking apart.
    Remove with skimmer and drain on brown paper.
    Makes 12 to 15 cakes.
