Chicken Jumbolia - cooking recipe

Ingredients
    1 c. chopped celery
    1 c. chopped onion
    1 c. chopped green pepper
    2 Tbsp. margarine
    1 1/2 c. chicken broth or water
    1 c. uncooked rice
    1 (16 oz.) can tomatoes
    2 c. chopped cooked chicken
    cayenne pepper to taste
    salt and pepper to taste
Preparation
    Cook celery, onion and green pepper slowly in margarine until soft.
    Add chicken broth or water, uncooked rice, tomatoes (cut up with juice) and chicken.
    Bring to a boil.
    Flavor with spices. Turn down and cook for 40 minutes or until rice is cooked.
