Tofu Spaghetti Sauce - cooking recipe

Ingredients
    1 (19 oz.) pkg. tofu
    2 Tbsp. oil
    2 cloves garlic
    2 onions, diced
    2 large tomatoes, diced
    2 green peppers, diced
    3 mushrooms, diced
    2 c. water
    3 bay leaves
    1/2 c. ketchup
    3 Tbsp. butter
    2 1/2 Tbsp. soy sauce
    dash of pepper
    1/3 c. grated cheese
Preparation
    Heat oil in wok or large heavy pot.
    Add garlic and onions; saute for 3 to 4 minutes.
    Add tomatoes, green peppers and mushrooms; saute for 3 to 4 minutes more.
    Add water.
    Drop in 1 bay leaf.
    Bring to a boil.
    Cover pot and simmer for 15 minutes. Add remaining ingredients, except cheese.
    Cover and simmer, stirring occasionally, for about 1 hour.
    Remove bay leaves and serve over spaghetti noodles.
    Top with Parmesan cheese.
