Zucchini Bread Or Cake - cooking recipe

Ingredients
    1 3/4 c. sugar
    1 c. oil
    2 eggs
    3 c. zucchini
    1 tsp. vanilla
    1 c. (or less) nuts
    1 pkg. instant coconut cream (or vanilla) pudding
    1/2 c. flake coconut
    3 or 3 1/4 c. flour
    1 1/2 tsp. cinnamon
    1 1/2 tsp. soda
    2 tsp. baking powder
    1/2 tsp. salt
    2 tsp. cocoa
Preparation
    Shred or grate zucchini (if done in the blender add 1/2 cup of the oil with it).
    Sift together dry ingredients except pudding. Beat sugar and eggs, add oil and blend well. Alternately add dry ingredients and zucchini.
    Stir in nuts and coconut, add vanilla and instant pudding.
    Pour into 4 miniature pans (3 x 5 x 3-inch) that have been greased well and floured.
    Bake in 350\u00b0 oven for 50 minutes or until done.
