Microwave Pineapple Upside-Down Cake - cooking recipe

2 Tbsp. butter or margarine
1/2 c. brown sugar
6 slices pineapple (reserve juice)
6 maraschino cherries
yellow cake mix (Jiffy cake mix, 8 1/2 oz.)
Preparation

Prepare yellow cake mix as directed on package, substituting pineapple juice for the water.
Melt butter in microwaveproof cake or pie dish, about 30 to 45 seconds.
Mix brown sugar with butter. Arrange pineapple and cherries on top of butter and brown sugar mixture.
Pour cake batter over top of brown sugar, pineapple and cherries in dish.
Cover with a paper towel or waxed paper. Micro-bake 9 to 11 minutes on Medium-high, rotating once.
