Italian Rice Cake - cooking recipe

Ingredients
    1 c. uncooked rice
    4 c. milk
    1 tsp. shortening
    1/4 to 1/2 c. bread crumbs
    3/4 c. sugar
    1 Tbsp. shortening
    5 egg yolks
    juice and grated rind of 1 lemon
    1 tsp. salt
    5 egg whites, stiffly beaten
Preparation
    Cook rice in milk at a low simmer until milk is absorbed and rice is tender.
    Cool to room temperature for 30 to 40 minutes.
