Ingredients

10 large potatoes, grated
3 large onions, grated
1 heaping Tbsp. flour
3 eggs, separated
salt (optional)
pepper to taste
vegetable oil
Preparation

Grate potatoes and onions alternately (onions keep potatoes white).
Add egg yolks and flour to potatoes.
In a separate dish, beat egg whites until fluffy.
Fold into potato batter.
Fry in vegetable oil until golden brown on both sides.
You may top with sour cream, jelly, cream cheese or applesauce.
