Coconut And Honey Cakes - cooking recipe
Ingredients

1 1/4 c. milk
1 1/4 tsp. honey
2 1/4 c. unsweetened flaked coconut
1/2 c. sugar
1/4 c. all-purpose flour
1 1/2 tsp. baking powder
2 large eggs, well beaten
Preparation

In a heavy saucepan over medium heat, bring milk and honey to a boil.
Remove from heat and set aside.
In a bowl, combine the coconut, sugar, flour and baking powder.
Slowly add the milk mixture and stir until smooth.
Stir in the eggs until well combined.
The batter will be quite liquid.
Spoon the batter into 24 mini muffin pans lined with paper cups.
Fill each cup nearly full.
Each time you fill a cup, stir your batter.
Bake in preheated 375\u00b0 oven for 20 to 25 minutes.
Cool the pan on a wire rack.
