Potato Salad Ii - cooking recipe
Ingredients

5 lb. potatoes
salt and pepper to taste
1 onion, chopped
2 small jars chopped pimento
1 tsp. or more mustard (if desired)
3 or more Tbsp. mayonnaise
1/2 stick margarine
3 boiled eggs, chopped
3 Tbsp. cubed sweet pickles and juice
Preparation

Peel, wash and dice potatoes.
Boil until tender, about 30 minutes; drain.
Add margarine, salt and pepper to hot potatoes. Mix in a bowl the eggs, onion, pickles and juice, pimento, mustard and mayonnaise.
(This can be mixed an hour or so ahead of time and refrigerated.)
Add mixture to potatoes while they are hot or very warm; mix gently.
