Garlic And Mustard Crumbed Chicken - cooking recipe

Ingredients
    4 pieces of chicken
    5 or 6 slices firm white bread
    1/4 c. vinegar or lemon juice
    1/2 c. lightly packed fresh parsley
    1/4 c. Dijon mustard
    1 or 2 cloves of garlic
    1/4 tsp. salt
    freshly ground pepper
Preparation
    Heat oven to 400\u00b0.
    Tear bread into small pieces and process in a food processor until crumbs form.
    Wipe any bread crumbs from the processor and put in the vinegar, parsley, mustard and garlic; process until all are finely chopped.
    Season to taste with salt and pepper.
    Place chicken in a baking pan, pour the vinegar mixture over chicken, rubbing onto both sides.
    Pat a thick coating of crumbs on both sides of chicken.
    Bake, uncovered, about 1 hour until juices run clear when pierce.
    Makes 4 servings.
