Zucchini Souffle - cooking recipe

Ingredients
    5 large zucchini
    fried onions (lots)
    fresh mushrooms or 1 (8 oz.) can stems and pieces
    1 can condensed mushroom soup
    3 Tbsp. mayonnaise
    5 eggs
    potato latke mix (8 oz.)
    salt and pepper to taste
    1 diced red pepper (optional)
Preparation
    Dice zucchini and cook until soft, then drain.
    Mash cooked zucchini; drain off excess liquid.
