Broiled Basil Eggplant - cooking recipe

Ingredients
    1/4 c. olive oil
    2 Tbsp. lemon juice
    2 Tbsp. parsley
    2 Tbsp. chopped basil
    salt and pepper to taste
    8 large (1/3-inch) eggplant slices
    3 Tbsp. olive oil
    3 oz. Mozzarella cheese, sliced 1/8-inch thick
Preparation
    Whisk 1/4 cup olive oil and next 4 ingredients.
    Brush the 3 tablespoons olive oil on both sides of eggplant.
    Salt and pepper. Broil until tender and light brown, turning once.
    Place overlapping on ovenproof platter.
    Top with cheese.
    Broil until cheese melts.
    Whisk olive oil and lemon juice mixture again and spoon over garnish with fresh basil and serve immediately.
