Zucchini Bread - cooking recipe
Ingredients

3 eggs, slightly beaten
1 c. oil
1 tsp. vanilla
1 tsp. soda
1/4 tsp. nutmeg
2 c. sugar
2 c. zucchini, grated
3 c. sifted flour
1 tsp. salt
2 tsp. cinnamon
1/2 tsp. baking powder
Preparation

Combine and beat together the eggs, sugar, oil, zucchini and vanilla.
Set aside.
Sift together the flour, salt, soda, cinnamon, nutmeg and baking powder.
Add the dry mixture to the egg mixture and stir well.
If desired, add one cup chopped nuts. Pour into 2 well-greased loaf pans and bake at 325\u00b0 for 1 hour. Yields 2 loaves.
