Violet Honey - cooking recipe

Ingredients
    1/2 c. washed violet petals
    1/2 jar honey
Preparation
    Stir violets into honey.
    Place jar on a cloth in a pan of water (filled to neck of jar).
    Bring to a
    boil; simmer for 30 minutes.
    Remove from pan; leave to cool.
    Infuse for 7 days. Warm the honey, strain out violets and pour into a clean jar.
    A lovely Victorian treat!
