Zucchini Casserole - cooking recipe
Ingredients

2 lb. zucchini, sliced
1/2 c. onion, chopped fine
1 can cream of chicken mushroom soup
1 (8 oz.) carton sour cream
1 carrot, grated
1 box Stove Top stuffing for chicken
1/2 c. butter
Preparation

Boil or steam zucchini\tand onion.
Drain water and set aside. Mix soup, sour
cream
and grated carrot and fold into zucchini and onion.\tMelt 1/2 cup butter and mix with stuffing mix. Sprinkle 1/2
stuffing
mixture
into
8-inch casserole. Pour zucchini mixture
over.
Sprinkle
remaining stuffing mix on top. Bake at 350\u00b0 for 25 to 30 minutes.
