Beef Stroganoff(Mrs. Johm F. Kennedy) - cooking recipe

Ingredients
    2 lb. beef
    1 Tbsp. flour
    3 Tbsp. butter
    2 c. beef stock
    1 Tbsp. heavy sour cream
    2 Tbsp. tomato juice
    3 Tbsp. grated onion
    salt and pepper
Preparation
    Cut beef into thin strips.
    Sprinkle freely with salt and pepper; let stand 2 hours in cool place.
    Make a roux by blending flour with butter over gentle heat, until mixture bubbles and is smooth.
    Gradually stir in beef stock and cook until mixture begins to thicken.
    Boil for 2 minutes, then strain into a saucepan.
    Add heavy cream and tomato juice, stirring constantly. Simmer very gently, without boiling.
