Beet Pickles - cooking recipe

Ingredients
    3 c. sugar
    1 1/2 Tbsp. whole allspice
    2 tsp. salt
    4 c. vinegar
    1 1/2 c. water
    5 qt. peeled, cooked small beets
    2 sticks cinnamon
Preparation
    Pack cooked beets into hot, sterilized jars.
    Combine remaining ingredients in saucepan; simmer 15 minutes.
    Remove cinnamon.
    Pour boiling hot liquid over beets, leaving 1/2-inch headspace.
    Adjust caps.
    Process pints and quarts 30 minutes in boiling water bath or let pressure reach 10 pounds and remove from burner.
    Makes 5 quarts.
