Watermelon Rind Pickles - cooking recipe

Ingredients
    10 lb. rind
    7 lb. white sugar
    5 pt. apple vinegar
    2 oz. stick cinnamon
    1 oz. whole cloves
    1 oz. ginger root
Preparation
    Cut rind up and let stand in cold water overnight.
    Next morning, cook until clear in same water.
    Make syrup; tie spices in a bag.
    When the syrup gets thick, drop in drained rind and let come to a boil.
    Take out fruit and drain.
    Next morning, heat syrup; pour over fruit.
    Let boil.
    Pack in hot jars and seal.
