Best Ever Chicken Salad - cooking recipe
Ingredients

5 c. chopped, cooked chicken
2 Tbsp. salad oil
2 Tbsp. orange juice
2 Tbsp. vinegar
1 tsp. salt
3 c. cooked regular rice
1 1/2 c. small seedless grapes (optional)
1 1/2 c. sliced celery (optional)
1 (15 1/4 oz.) can pineapple chunks, drained
1 (11 oz.) can mandarin orange sections, drained
1 c. toasted slivered almonds
1/2 c. mayonnaise
Preparation

Combine first 5 ingredients in a large bowl.
Let stand about 30 minutes to allow flavors to blend.
Add remaining ingredients and toss gently. Chill. Yields 10 to 12 servings.
