Zucchini Raisin Cookies - cooking recipe

Ingredients
    1/2 c. shortening
    1 c. sugar
    1 egg
    1 c. shredded peeled zucchini
    2 c. all-purpose flour
    1 tsp. baking soda
    1 tsp. cinnamon
    1/2 tsp. baking powder
    1/2 tsp. salt
    1/2 tsp. nutmeg
    1/4 tsp. ground cloves
    1 c. raisins
Preparation
    Cream shortening and sugar.
    Add egg.
    Beat well.
    Stir in zucchini and set aside.
    Combine flour, baking soda, cinnamon, baking powder, salt, nutmeg and cloves.
    Add to the zucchini mixture; stir thoroughly until combined.
    Stir in raisins.
    Drop by rounded teaspoonfuls 2 inches apart on greased baking sheet. Bake at 375\u00b0 for 12 to 15 minutes or until golden brown.
    Cool on pans for 2 minutes before removing to a wire rack.
    Cookies are cake like.
    Yields 3 dozen.
    Can be frozen in airtight containers and thawed as needed.
