Cold Zucchini Soup - cooking recipe

Ingredients
    2 large zucchini, sliced
    1 green pepper, chopped
    1/2 c. onion, chopped fine
    3 c. chicken stock or chicken broth
    1 c. sour cream (lo-cal substitute is okay)
    1 Tbsp. chopped parsley
    1/4 tsp. dried dill
    salt and pepper
Preparation
    In a saucepan, simmer zucchini, green pepper, onion and chicken stock.
    Place sour cream (or substitute), parsley and dill in a blender; add the simmered vegetables and blend for 30 seconds.
    Add the remaining stock and blend until it has a nice consistency.
    Chill thoroughly.
