Mexican Chicken And Rice - cooking recipe

Ingredients
    1 medium red bell pepper
    2 c. frozen green peas
    1 (8 oz.) pkg. Mexican style rice mix (chicken flavor)
    8 chicken drumsticks
    1/4 c. sliced scallions
Preparation
    Cut pepper in thin strips; put strips and peas in large nonstick skillet.
    Stir in rice mix and 2 cups water; bring to a boil.
    Remove skin from drumsticks and place them in one layer on rice; reduce heat and simmer for 15 minutes, covered.
    Turn drumsticks; cover and simmer 10 minutes or until chicken is no longer pink near the bone.
    The liquid will be almost absorbed. Sprinkle with scallions.
