Meatless Lasagne - cooking recipe

Ingredients
    1 large eggplant, sliced
    1 c. chopped onion
    2 garlic cloves, minced
    1/4 c. margarine
    1 (15 1/2 oz.) jar spaghetti sauce
    1 1/2 tsp. Italian seasoning
    8 oz. lasagne noodles, cooked and drained
    1 c. cottage cheese
    1 (8 oz.) pkg. Mozzarella cheese
    1/2 c. grated Parmesan cheese
Preparation
    Preheat oven to 375\u00b0.
    Saute eggplant and garlic in margarine. Add spaghetti sauce and seasonings.
    Bring to a boil; reduce heat.
    Cover and simmer 10 minutes.
    Layer half of noodles, sauce, cottage cheese, Mozzarella cheese and Parmesan cheese in a 12 x 8-inch baking dish.
    Repeat layers.
    Bake 30 minutes.
    Let stand 10 minutes before serving.
