Veal Patties(Kalve Karbonader) - cooking recipe

Ingredients
    2 eggs
    1 1/2 c. light cream
    1 tsp. salt
    1/4 tsp. ground pepper
    1 lb. veal plus 1/4 lb. fresh pork, ground together twice
    8 zwieback
    2 Tbsp. finely chopped parsley
    1 tsp. freshly ground nutmeg
    1/4 c. butter
Preparation
    Beat eggs and cream together slightly.
    Crush and grind zwieback into fine crumbs and add to cream.
    Add parsley, salt, pepper and nutmeg.
    Blend well.
    Gradually add zwieback mixture to meat.
    Form into round cakes, 2 inches in diameter.
    Cook in butter over low heat until patties are cooked through, turning once.
    Yield:
    about 12 patties.
