Hot Potato And Sauerkraut Salad - cooking recipe

Ingredients
    4 slices bacon
    1/4 c. sugar
    2 Tbsp. flour
    1 tsp. celery seed
    1 (14 or 16 oz.) can sauerkraut, drained (reserve liquid)
    1/2 c. cider vinegar
    6 medium or 12 small red potatoes, cubed (about 6 c.)
    1 c. celery, sliced
    1/2 c. green onions, sliced
    2 Tbsp. fresh parsley, chopped (optional)
Preparation
    Slice celery and onions.
    Put potatoes in a large pan; fill with cold water just to top of potatoes.
    Heat on high (no lid) until it starts to boil.
    After a full boil, remove from heat (test that fork will easily go into potatoes, but do not overcook).
    Run cold water over potatoes to cool; drain all water off and set aside.
    Add enough water to sauerkraut liquid to make 1 cup.
