Ingredients

4 c. milk
1/3 c. rice
1/2 tsp. salt
1/3 c. sugar
grated rind of 1/2 lemon
1 c. white sugar
3 tsp. cinnamon
1 tsp. cloves
1 1/2 c. unsweetened applesauce, mixed with 2 tsp. soda
3/4 c. raisins
1/2 c. currants
2 1/2 c. flour
1/2 c. melted butter (or oil)
Preparation

Measure ingredients in order given in a bowl.
Beat vigorously.
Bake in well-greased loaf tin at 350\u00b0 for about 1 hour.
