Black-Eyed Peas And Red Beans - cooking recipe

Ingredients
    1/2 c. dry red beans
    1/2 c. dry black-eyed peas
    1 bay leaf
    1/2 tsp. salt
    3 slices bacon
    1 c. chopped red, yellow and/or green peppers
    1 large onion, chopped
    3 cloves garlic, minced
    1 tsp. dried thyme, crushed
    1/8 tsp. ground red pepper
    dash of ground black pepper
Preparation
    Rinse red beans; drain.
    In a large saucepan, combine the red beans and 3 cups water.
    Cover and let stand overnight (or use quick method).
    Drain, discarding the soaking liquid.
    Rinse and return beans to saucepan.
    Add 3 cups fresh water, washed black-eyed peas, bay leaf and salt.
    Bring to boil, reduce heat. Cover and simmer 45 to 60 minutes, or until peas and beans are tender.
    Drain, discarding bay leaf.
