Ingredients

1 1/2 c. raw rice
3 c. water
3/4 tsp. salt
1 c. sugar
2 c. regular milk
3 eggs, slightly beaten
1 small piece lemon peel or 1 tsp. vanilla extract
Preparation

In a heavy saucepan stir rice into boiling water and add salt. Boil for about 10 minutes.
Stir in sugar and add milk and lemon peel if desired.
Continue cooking, stirring frequently, until rice mixture thickens, about 15 minutes longer.
Beat the eggs and stir in about 5 tablespoons of the rice mixture.
Lower the heat and quickly add egg mixture to the simmering rice.
Stir constantly and cook 10 minutes longer or until thick and creamy. If desired, add vanilla extract at this time and pour onto serving platter.
Sprinkle with cinnamon.
