Carrot Jam - cooking recipe

Ingredients
    1 qt. grated raw carrots
    2/3 c. lemon juice
    1/3 c. grated lemon peel
    3 c. sugar
    1/2 tsp. cloves
    1/2 tsp. allspice
    1/2 tsp. cinnamon
Preparation
    Combine all ingredients in a large saucepot.
    Bring slowly to a boil.
    Reduce heat; simmer, stirring constantly until thick. Pour hot into jars, leaving 1/4 inch headspace.
    Adjust caps. Process 10 minutes in boiling water bath.
    Yields about 3 half pints.
