Ingredients

4 orange sections, free from membrane, diced and drained
1 c. orange juice and water
1/2 c. sugar
1 Tbsp. grated orange rind
1 pkg. orange gelatin
3/4 c. Baker's coconut (premium shred)
1 c. warm water
Preparation

Combine orange and sugar and let stand 10 minutes.
Drain and add water to make 1 cup liquid.
Dissolve jello in warm water.
Add orange juice, water and orange rind.
When slightly thickened, fold in oranges and coconut.
Turn into individual molds.
Chill until firm.
Garnish with whipped cream, if desired.
Serves 6.
