Mincemeat - cooking recipe

Ingredients
    5 c. chopped cooked meat
    2 1/2 c. chopped suet (optional)
    7 1/2 c. chopped apples
    3 c. cider
    1/2 c. vinegar
    1 c. molasses
    5 c. sugar
    3/4 lb. citron, finely chopped
    2 1/2 c. whole raisins
    1 1/2 c. chopped raisins
    juice of 2 lemons
    juice of 2 oranges
    dash of salt
    1 Tbsp. mace
    2 to 3 Tbsp. each cinnamon, cloves and allspice
    2 nutmeg, grated
    2 Tbsp. lemon extract
    1 Tbsp. almond extract
    1 1/2 c. brandy rum (optional)
Preparation
    Mix ingredients in order given except brandy.
    Let simmer 1 1/2 hours.
    Add brandy and shavings from rind of lemons and oranges.
