Jamaican Rice And Peas - cooking recipe
Ingredients

1 pt. white rice
1/2 pt. red peas
2 stalks scallions
1 pinch of lime
1 c. coconut cream
1 oz. margarine
salt or all-purpose seasoning
Preparation

Fill a 1-quart pot halfway with water.
Add scallions, lime, coconut cream and salt or all-purpose seasoning.
Let this simmer until the peas are cooked, then add rice, margarine and more water. This should be stirred periodically while rice is cooking.
Heat under pot should also be turned down very low.
This will allow water to dry out, therefore not cooking the rice too soft.
