Eggplant Delite - cooking recipe

Ingredients
    1 large eggplant, peeled, sliced lengthwise 1/4-inch, salted and allowed to weep
    2 eggs, beaten with water
    plain breadcrumbs
    1/2 to 1 lb. Ricotta, softened with 2 to 3 eggs
    2 Tbsp. olive oil
Preparation
    Dry eggplant with towel.
    Coat with egg and breadcrumbs.
    Fry in olive oil.
    Place on paper towels.
