Mock Scallop Oyster - cooking recipe
Ingredients

1 medium eggplant
2 medium onions
1/4 c. butter
1 c. milk
3/4 c. strong cheese, cubed
2 slightly beaten eggs
1 tsp. baking powder
1/4 lb. Ritz crackers
Preparation

Peel and cut eggplant in chunks.
Add sliced onions.
Cook in salted water until tender.
Drain and add butter.
While vegetables are cooking, prepare and combine other ingredients.
Add vegetables and mix thoroughly.
Bake at 325\u00b0 for about 1 hour.
Great main dish.
It's like a souffle.
