Tex-Mex Salsa - cooking recipe

Ingredients
    3 qt. or 12 c. diced tomatoes
    3 medium bell peppers
    6 Jalapeno peppers cut up
    3 medium onions diced
    5 garlic cloves cut up
    1 1/2 c. vinegar
    5 tsp. salt
    3 tsp. sugar
    1/4 tsp. cayenne
    1/4 tsp. oregano
    1/4 tsp. cumin
Preparation
    Cook first 5 ingredients until coarse. (15 minutes)
    Add vinegar, salt, and sugar.
    Simmer for 30 minutes.
    Add remaining ingredients.
    Cook for 15-20 minutes longer.
    Pour into jars and seal.
    Makes about 6-8 pt.
