Minty Delight - cooking recipe

Ingredients
    1/4 large vanilla bean, split
    1/4 tsp. peppermint flavoring
    2 1/4 c. skim milk
    1/2 c. sugar
    1 envelope Knox gelatine
    dash of salt
    green food coloring (as desired)
    1 1/2 c. plain, low-fat yogurt
    1/4 c. light colored corn syrup
Preparation
    Scrape seeds from bean.
    Combine seeds, bean and milk; bring to a boil.
    Remove from heat and let stand for 30 minutes. Discard bean.
    Add sugar, gelatin, peppermint and salt; let stand 1 minute.
    Cook over low heat 5 minutes or until gelatin dissolves.
    Cool completely.
    Stir in yogurt and corn syrup.
    Pour into a bowl; cover and chill 8 hours.
    Using a 1-quart hand turned or 1/2-gallon electric freezer, freeze according to manufacturer's instructions.
    Chill 1 hour until firm.
