Sauerkraut In A Jar - cooking recipe

5 lb. cabbage
3 1/2 Tbsp. salt
Preparation

Shred the cabbage.
Put the cabbage and salt in a large pan. Mix with hands, then pack into jars. Fill with cold water.
Put on caps (I boil mine) and put screw bands on tightly. Allow to ferment 3 to 4 days (I put jars on layers of newspapers).
Wash outside of jars and tighten screw bands and process in boiling bath for 15 minutes. Wait 6 weeks before using.
