Confetti Stuffed Peppers - cooking recipe

Ingredients
    5 small sweet peppers (red, green or yellow)
    1/2 c. onion, chopped
    2 oz. chopped mushrooms (about 1/2 c.)
    1 c. Cheddar cheese, shredded
Preparation
    Cut peppers into quarters; core and seed.
    Place on microwave-safe dish.
    Cover with microwave-safe plastic wrap. Microwave at full power 3 minutes, rotating dish one quarter turn after 2 minutes.
    Cool slightly.
    Combine onion and mushrooms in 9-inch microwave-safe dish.
    Cover with microwave-safe plastic wrap.
    Microwave at full power 2 minutes.
    Spoon onion-mushroom mixture onto pepper quarters.
    Sprinkle with cheese.
    Microwave, uncovered, at full power 2 to 3 minutes, until cheese melts. Garnish with crumbled bacon, green onion and pimiento.
