Easy Lemon Pie - cooking recipe
Ingredients

1 (3 oz.) pkg. lemon jello
2 Tbsp. lemon juice
2 c. ice cubes
1 graham cracker pie crust
2/3 c. boiling water
2 tsp. grated lemon rind (optional)
1 (8 oz.) container Cool Whip
Preparation

Dissolve gelatin completely in boiling water, stirring 3 minutes.
Add lemon juice, rind and ice cubes and stir constantly until thickened, about 2 to 3 minutes.
Remove any unmelted ice. With whisk, blend in Cool Whip; whip until smooth.
Chill if necessary until mixture mounds.
Spoon into pie crust.
Chill 2 hours or until firm.
Garnish as desired.
