California Pepper Relish - cooking recipe
Ingredients

12 large red and green peppers (about 9 c.; mix however you wish)
3 Tbsp. salt
6 large tomatoes, peeled and chopped
3 c. sugar
1 c. cider vinegar
6 large onions, chopped (2 c.)
2 Tbsp. mixed pickling spices (tied in cheesecloth bag and mashed)
Preparation

Halve, seed and chop peppers.
Layer with salt in large, glass bowl.
Allow to stand at room temperature 3 hours, stirring several times.
Drain peppers well.
Combine drained peppers, tomatoes and onions.
Stir in sugar, vinegar and spices.
Bring to boil (stir often).
Lower heat to simmer to prevent scorching. Cook for 30 minutes or until thick.
Remove spice bag.
