Mini Cheesecakes - cooking recipe

Ingredients
    2 eggs
    2 (8 oz.) Philadelphia cream cheese
    3/4 c. sugar
    1 Tbsp. lemon juice
    1 tsp. vanilla
    vanilla wafers
Preparation
    Cream together softened cream cheese and sugar until well blended and fluffy.
    Add eggs, vanilla and lemon juice.
    Mix until well blended.
    Place a vanilla wafer in bottom of paper liner and fill cupcake tin 3/4 full.
    Bake at 350\u00b0 for 18 minutes.
    Yields 16 cupcakes.
    When cooled, put cherry pie filling on top.
