Ingredients

3 large onions, sliced
4 Tbsp. butter
2 Tbsp. flour
7 1/2 c. beef broth
salt
pepper
slices of French bread
grated Gruyere, Monterey Jack or Muenster cheese
Preparation

Fry onions in butter only until golden and transparent.
Stir in flour and let it cook for 2 minutes.
Add salt and freshly ground pepper and pour in broth, stirring well.
Simmer gently for 15 minutes.
Fry slices of French bread in butter (usually one or two per person), place them in an ovenproof soup tureen or individual soup bowls and pour onions and broth over.
Sprinkle with thick layer of cheese.
Place in 350\u00b0 oven until cheese has melted and serve immediately.
