Basic Chicken Stock - cooking recipe

Ingredients
    3 qt. cold water
    bones of 1 chicken, gizzard and neck
    1 onion, peeled, cut in half and stuck with 2 cloves
    2 carrots
    2 celery stalks
    6 parsley stems
    2 bay leaves
    salt
    peppercorns
    pinch of leaf thyme
Preparation
    Place all ingredients in the cold water.
    Bring to a boil. Skim off foam.
    Simmer slowly for 4 hours to reduce by one-third. Strain and freeze.
