Breakfast Creek Meat Loaf - cooking recipe

Ingredients
    1 1/4 lb. ground beef
    1/4 onion, chopped
    1 or 2 pieces whole wheat bread or equivalent bread crumbs
    2 Tbsp. cottage cheese
    1 tsp. dry mustard
    1/8 tsp. black pepper
    1 egg or egg substitute
    1/4 green or sweet red bell pepper
    1/4 to 1/2 c. catsup or barbecue sauce (suit your own taste)
    1 Tbsp. horseradish or more if you like
    1/2 tsp. salt (more if you prefer)
Preparation
    Chop up your onion, pepper and bread together in a food processor.
    Add to meat and egg.
    Mix lightly and add remaining ingredients (get both hands in there).
    Shape into a loaf or a round baking pan rubbed lightly with Crisco.
    Brush top of loaf with additional catsup and add strips of bacon for a nice country flavor.
    Bake in 350\u00b0 oven for 55 to 60 minutes.
